What’s in Season in Autumn?

Apples and pears are the stars of the season, but don’t overlook the richness of blackberries, blueberries, and plums, which add a lovely burst of colour and flavour.

Pro Tip: If you can’t find organic apples or pears, it's best to peel them to reduce pesticide residue.

INGREDIENTS

1tsp ghee

1 tsp fresh grated ginger

1/2 tsp cinnamon

1/2 tsp ground cardamom

2 whole cloves

Small pinch salt

1 medium organic apple, cored and chopped

1 medium organic pear, cored and chopped

2 dried figs, chopped

Small handful organic raisins

 

Method

1. Infuse the Spices: Heat the ghee in a small pan over medium heat. Once melted, add the grated ginger, cinnamon, cardamom, cloves, and a pinch of salt. Gently simmer until the spices become fragrant, releasing their warm aroma (about 30-60 seconds). Be careful not to let them burn.

2. Add the Fruit: Stir in the chopped apple, pear, dried figs, and raisins. Toss them well to ensure they are evenly coated in the spiced ghee mixture.

3. Simmer the Fruit: Pour in ½ cup of water (or just enough to cover the fruit). Lower the heat to a gentle simmer, cover the pan, and cook for 3-5 minutes, or until the fruit becomes soft (but not mushy).

4. Serve: Remove the cloves before serving. Tip the stewed fruit into a bowl and enjoy immediately, while it's warm and comforting.
